AAMP's annual convention is geared toward U.S., Canadian, and Foreign operators of small and very small firms in the meat, poultry & food business: packers, processors, wholesalers, HRI, retailers, caterers, deli operators, home food service dealers, and catalog marketers. Both members and non-members of the Association attend this event looking for a vast array of ideas, supplies, and services.

2011-2012 Convention Committee
This Committee has the responsibility for overall planning of the Association's annual convention. It normally meets in October of the year preceding the convention to develop programs, workshops, social activities and other considerations implemented. However, matters relating to pricing for exhibit space, registration fees, or items necessitating significant financial commitment are regarded as subject to Board approval prior to implementation. Committee members serve a one-year term and are reimbursed only for their travel and lodging during the actual Convention Committee meeting in the fall of the year preceding the Convention being planned.

Educational Sessions
Planned by a committee of meat industry participants, morning-long concurrent sessions offer a wide variety of practical information, manufacturing solutions and business enhancement ideas. The focus is on small and very small operations.

Ham Production Seminar

Besides bacon, the ham is one of the most profitable centerpieces of the pork carcass.  Don’t miss this product market opportunity!  Cured ham is a non-unique product; but due to its desirable flavor profile, added value and versatile usages, it inherently is a unique product that consumers want and enjoy serving as a center-of-the-plate entree.  Learn from experienced independent processors regarding their ham processing, smoking, slicing, and marketing techniques.  Furthermore, it’s not all about one type of ham product.   Demonstrations will be provided for six different types of ham products, along with a demonstration regarding proper brine manufacturing techniques.  Over the years, fellow processors have found financial success in the production of a variety of different ham products.

Hands-On Product Demonstrations

Due to the success of the demonstrations at previous conventions and the current cost of raw materials, the committee decided to include them again this year. These demonstrations will be held in the exhibit hall, but not during exhibit hours. 

 

Most of us in the meat industry have heard the saying, “Anybody can cut meat, but making money cutting meat is the hard part.”  Nevertheless, operating a profitable meat department can be achieved with appropriate management routines in place.  One demonstration will pertain to the unique techniques of cutting meat for Latin Americans and the types of fresh products this growing market desires.  The other demonstration will focus on effectively developing a meat cutting test for fresh meat products and how to effectively utilize the data to increase profits.  Don’t miss out on the chance to learn new techniques through this unique educational opportunity!
