USDA's Food Safety and Inspection Service on Friday issued
draft compliance guidelines on sampling beef product for
E. coli O157:H7 in small and very small plants.
The Draft Guidance document offers specific testing frequency
recommendations for small and very small plants that produce
ground beef based on their daily volumes.
"The purpose of this guidance is to help small and very
small establishments develop sampling plans for monitoring
the effectiveness of process controls that are designed
to prevent Escherichia coli (E. coli) O157:H7 contaminated
product from leaving the establishment," the agency said.
