Recruiting and retaining qualified employees in all positions remains a significant hurdle for smaller meat and poultry processors. While large-scale processors utilize workers in an assembly line process, smaller processors need skilled butchers and other employees capable of handling everything from handling live animals being delivered to distributing finished products to the marketplace.

Flower Hill Institute Regional Directors Chris Roper and Dave Carter will discuss some of the positive developments in this area at Noon MDT on October 28th with Dr. Katherine Domenech-Perez of the University of Puerto Rico at Mayaguez and Dr. Mildred Alvarado of Cornell University’s Small Farms Program. They are pioneering new workforce development initiatives for smaller meat and poultry processors.
